Recipe: Vegetable Quiche

In 2010, Cat Bude, an American photographer, blogger and recipe creator, and her French husband packed up their young family and began a new life in Normandy. From their 380-year-old farmhouse, christened Rabbit Hill, they now host guests for guided market trips and cooking workshops. Her first cookbook, French Kitchen Lessons, was published in October and we are pleased to share some of her recipes in our January/February magazine.

“Long, wet winter months in Normandy call for cozy gatherings with friends,” Cat writes. “Typically, everyone stands around in the kitchen, and I long ago abandoned the idea of encouraging guests to take a comfortable seat in the living room while I finish dinner preparations. I have found that, if not already in the kitchen, guests always migrate back into the warmth and good smells of my favorite space in the house.”

Cat’s bright, airy kitchen, which she designed herself, became the heart of her home. Vaulted ceilings and ancient wooden beams hover above her altar to food, tradition and hospitality, a battery of 19th century copper cookware suspended from the walls. “I used mastering French cuisine and feeding people as my language,” Cat writes of embracing life in her adopted country.

We were delighted to feature Cat’s recipes in the January/February magazine – including Baked Camembert with Apples, Provençal Beef Stew and Lemon-Thyme Cake – which are perfect for gathering with guests on cool mid-winter days.

To give you a taste of what you can look forward to in her book and in the magazine, we are sharing with you here a delicious and decadent Vegetable Quiche recipe which Cat explains “is a great way to utilize random vegetables and excess eggs.” This recipe is wonderfully flexible and allows you to get creative with your ingredients without needing to measure everything precisely.

Cat loves the combination of sautéed cabbage, leeks and potatoes, accented by a topping of strips of smoky bacon.
