Lemon Hibiscus Mini Cakes Recipe

These spongy, moist lemon cakes have a perfect hit of zest and pair with almost any buttercream, but I particularly love the brightness of lemon combined with the oral notes of hibiscus. You can also use hibiscus to give the buttercream a beautiful natural pink color and can control how dark or light it is by how much you use. Many hibiscus powders are a bit brown, so for the most vibrant color be sure to use one that’s bright pink.

A crucial tip for the cakes is to make sure all of the ingredients are at room temperature. Also, when adding the dry ingredients, whisk them in by hand—it helps maintain the air in the batter and ensures everything is properly combined. For the buttercream, don’t be tempted to skip the 10-minute beating process. It’s essential for incorporating air, bringing the buttercream together beautifully, and achieving that lovely, glossy finish.
